our weekend

A warm, sunny weekend in the fall, 



made even better with 

Buttermilk Pumpkin Pancakes
adapted from Betty Crocker Cookbook pg. 77

2 eggs
2 cups buttermilk
1/2-3/4 cup pumpkin
2 cup flour
1/4 cup sugar
1 tsp cinnamon
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
dash of nutmeg

beat two eggs till frothy. Add in buttermilk and pumpkin and whisk till smooth.
heat and butter griddle over medium heat.
 mix dry ingredients and sift into buttermilk mixture. 
mix well, batter will be slightly lumpy.
then make pancakes!

I have no pictures of these, they went fast,
but I do have a serving recommendation,
pomegranate and and 100% pure maple syrup.

snapshots

this weekend was humbling.
and full of fun surprises.


started off my friday with a homemade chai tea with homemade whipped cream!


someone was excited about jacket weather!

Humbling moment #1: Saturday morning was gorgeous, so I thought I would take the girls to the park to play and swing. As we arrived we noticed tons of cars, booths and loud music, so we thought we would check it out. We walked over to the swings, and stared at all the fun things going on around us. All three girls wanted to swing, and I begun taking turns pushing each. On my third time around, Nora girl yelled, "Push me harder Mama! I want to go so high!" The Cord agreed, "Push me hard too!" So I did, Nora girl giggled. 
And Cord,
well she went flying out of the swing, 
somersaulting in mid air, 
and landing on her bottom in the mulch.
Mother of the year.
All in front of about 400 people.
So I am brushing mulch out of her hair, 
comforting her, 
while Nora girl says, "um Mom, I am slowing down again."
Seriously?! How in the world did I do this?!
Then a kind woman approached me and said,
"All these booths are completely free. Would your girls like to go play? 
We have Horse rides, games, face painting,
inflatable bouncy house and slide, petting zoo, and sno-cones."
Cord instantly cheered up, 
Nora girl pumped her fist, "Oh Yeah!"
(think Vector from Despicable Me)
"Wow, thanks" was all I could say,
still feeling very embarrassed.










Some nice cowboys brought two horses to give kids rides, Nora girl was a natural,
they were amazed at how easy it was for her to get up.
She told them."I love My Little Pony, I watch it a lot."
Cord seemed really sad about her ride,
I am guessing she was being pretty shy to the cowboy riding with her.
All in all it was a great day, and now they both want a horse.

Humbling moment #2: 
Sunday was nice and relaxing.
Church was good, convicting good.
In his lesson to the students, my husband brought up Jesus washing the Disciples' feet.
A story I have heard and read numerous times.
But, this time Levi pointed out that Judas had already betrayed Jesus,
and Jesus knew, yet still continued to serve him.
Talk about a gut punch. 
So often when I feel betrayed and let down, 
I feel justified in my good riddance mind-set.
But Jesus, was sent to death because of this man, 
and still He continued to serve him.
This is the submission and love of Jesus, that we are asked to emulate.
(John 13:1-17)

Yup. 
So I will continue to serve and love, 
asking Jesus to help, because I can't do it by myself.

hope y'all make it


more storms expected this afternoon into tonight.
We have been itching to get to the lake,
but its another busy weekend with storms in the forecast.
Blerg.

How are you spending your weekend?

This morning I made Chocolate Chip Buttermilk Scones. Delish!

Tomorrow is supposed to be garage sale day here, weather permitting.
Yay for simplifying!!

Here is a sweet family of 6 about to head out on an adventure 
after selling their house, most of their possessions,
and will be living in their airstream!

This movie is coming out soon and I am pretty excited about it!
(Ron Swanson is in it!)

lately

Here's a little peek
of what we have been doing
lately.

Catalyst
Last week,
Levi, Pen, and I drove to Texas,
(the big girls stayed with Gram and Pops)
to attend Catalyst,
a two day conference packed with
intelligent speakers
encouraging us to make,
to do, to start now.
We listened to them.
We were overwhelmed by them.
We were affirmed by them.
We are thankful for them.


I had my very first and second In-N-Out experience!

May Summer Shape Up
My dear friend, Aanna, began a workout program
designed by her friend, Abby,
and invited her readers to join her.
Since I just finished #nomakeup430,
I was ready for a new challenge.
Plus, about 25 people are joining her as well,
and that is just fun!
So I have been lifting canned beans,
dancing till I sweat,
getting incredibly sore,
and
LOVING every minute of it!
More on this to come.

Potty Training Cord
She is getting it!!
Her Gram and Pops were consistent with her,
and after many accidents,
she is doing so great!
She however cries when she poops in the froggy potty.
(It isn't like I make her clean it, she just knows it belongs in the big potty)
She now cheers when anyone goes potty.
When she hears "Yaya" (Daddy) flush, "Yay Yaya!"
When, she watches me, (Is privacy still a thing? HA!) "Yay Mama!"
When she and Nora sit side by side on the potties,
"Yay Nahh, Yay Dahdee!"
And when Pen has a dirty diaper,
she says, "Yuck, no no, pah-ee."(potty)
Oh yea, it's fun!



Getting back
once we were reunited with our girls,
(finally!! it's interesting how quickly you miss them!)
reality came back really, rrreeaallyy fast.
AND,
the weather is getting warmer!!
Soon, we look forward toward
-spending all day in our swimsuits
-popsicles
-grilling
- camping
-road trip to my parents!

choose joy

Joy, a choice?
I totally agree.
Sometimes even P has to choose joy, ha!





We choose joy by celebrating 
our two year old who is becoming a little girl,
(man, potty training is hard!)
our seventh month old healthy baby,
our energetic, sweet four year old,
and our friendship and love,
our family.

We chose joy by focusing on
Jesus, 
what he has done for us,
how much he loves us,
even though we don't deserve it.
ALL that He so graciously gives to us.

We choose joy by not letting 
frustrations and worry rule.
We rest in His faithfulness.

And by choosing joy
our weekend was splendid.
We were blessed, we are blessed, 
and we hope to bless.

i hope to always remember this joyful weekend
